Sweets, Gelatin and Hidden Animal Additives

🍬 Halal Foods

Gummy sweets, marshmallows, jelly, some chocolates, glazed sweets and even bread can contain animal-derived additives. The four to know are gelatin, carmine (E120), shellac (E904) and L-cysteine (E920). This article explains each and what the alternatives look like on a label.

Gelatin (E441). Gelatin is a protein obtained by boiling the skin, bones and connective tissue of animals. Worldwide, roughly 40% is from pig skin, 45% from cattle hides and bones, and the rest from fish or poultry. It is in gummy bears, jelly cubes, marshmallows, some yoghurts, mousses, cheesecakes, gummy vitamins, medicine capsules, some ice creams, cream liqueurs and the clarification of some juices. Rulings: pork gelatin is haram by the agreement of the four schools, since pig is impure in its entirety (6:145). Gelatin from cattle that were not slaughtered Islamically is carrion-derived and haram in the Shafi'i, Maliki and Hanbali schools and in the mainstream Hanafi position. Gelatin from halal-slaughtered cattle and fish gelatin are halal. A minority of contemporary scholars (and bodies such as the European Council for Fatwa and some Egyptian fatwas) argue that the chemical process of making gelatin is a complete transformation (istihalah) that produces a new, pure substance, making even pork gelatin permissible. The majority of scholars and halal certifiers, including the Islamic Fiqh Academy, reject this for pork gelatin because the collagen protein is not truly transformed into something new. The safe practice is to accept only gelatin labelled halal, bovine halal, or fish, and to prefer products set with pectin, agar or carrageenan, which are plant-based.

Carmine, cochineal (E120, "natural red 4"). A red dye made from crushed cochineal insects. Used in red and pink sweets, strawberry yoghurts, red drinks, lipsticks and some sausages. Hanafi scholars regard insects other than locusts as impure, so carmine is not eaten; the Maliki school allows insects and therefore carmine; many Shafi'i and Hanbali scholars avoid it as the eating of a creature not slaughtered. Several large halal certifiers permit it, others do not. If you wish to be cautious, choose products coloured with beetroot red (E162), anthocyanins (E163) or lycopene (E160d).

Shellac (E904). A resin secreted by the lac insect, used as a glaze on sweets, chocolate beans, apples and citrus, and in pharmaceutical coatings. It is not the body of the insect but its secretion, like honey from bees, and the majority of scholars and certifiers accept it as halal, though some strict Hanafi opinions avoid it. Shellac is sometimes dissolved in ethanol during processing, which evaporates.

L-cysteine (E920). An amino acid used as a dough conditioner in bread, pizza bases, bagels and some biscuits. Historically produced from human hair (in China) or from duck feathers and pig bristles; today most L-cysteine is made by bacterial fermentation and is halal, and human hair as a source is considered haram by scholars because of the sanctity of the human body. Products made with it are usually labelled E920 or "L-cysteine"; vegan-labelled bread is free of animal cysteine. Major fast-food chains in the US have moved to synthetic or vegan cysteine; ask if unsure.

Other sweets ingredients. Glycerol (E422) in cake icing and chewing gum can be from animal fat or vegetable oil; vegan labelling or a halal mark resolves it. Mono- and diglycerides (E471) in chocolate, biscuits and ice cream are usually from palm or soy oil in Europe but can be from tallow; again look for vegan or halal certification when the source is not stated. Rum, brandy and liqueur fillings in chocolates are haram. Vanilla extract in small amounts is accepted by most scholars (see the drinks article). Bone char is used in some countries (notably the US) to whiten cane sugar; the sugar contains no bone, and scholars consider it halal, though some prefer beet sugar or organic sugar which are not filtered through bone char.

Marshmallows, Haribo and jelly in Muslim countries are usually made with halal bovine gelatin and carry a mark; the same brand sold in Europe may use pork gelatin, so do not assume.
