Milk, butter, cream and yoghurt are halal. Cheese is where questions arise, because it is set with rennet or other enzymes that may come from the stomach of a calf that was not slaughtered Islamically. Here are the facts and the views.
Milk and its simple products. Allah describes milk as "pure milk, palatable to drinkers" (16:66). Milk, cream, butter, ghee, plain yoghurt, kefir and lassi from halal animals (cow, buffalo, goat, sheep, camel) are halal without any check. Milk from forbidden animals (pig, donkey, predators) is forbidden. Horse milk (kumis) follows the ruling on horses; note that fermented kumis contains alcohol and is avoided.
How cheese is made. Milk is curdled with an enzyme. Four sources exist: (1) animal rennet, extracted from the fourth stomach of calves, lambs or kids; (2) microbial rennet, produced by fungi such as Rhizomucor miehei; (3) fermentation-produced chymosin (FPC), made by inserting the calf gene into yeast or bacteria, with no animal involved; (4) plant coagulants such as thistle, used in some Portuguese and Spanish cheeses. Today more than 80% of cheese in the US and much of Europe is made with FPC or microbial rennet, which are halal by agreement. Traditional Parmigiano Reggiano, Grana Padano, Pecorino Romano, Gruyère, Comté, Manchego, Roquefort and many farmhouse cheeses still require animal rennet under their protected designations. Lipase, an enzyme added for sharp flavour in Provolone, Romano and some feta, is traditionally from kid or lamb glands, though microbial lipase is now common.
The rulings on animal rennet. If the animal was slaughtered Islamically, its rennet is halal by agreement. If it was not (which is the case for almost all European calf rennet), the schools differ. The Hanafi school holds that rennet is pure even from a dead animal, since it is not blood or flesh and does not carry life; Imam Abu Hanifah compared it to milk, which is pure in a dead animal. This view is supported by the hadith that at Tabuk, in a land of non-Muslims, the Prophet ﷺ was brought cheese; he called for a knife, said Bismillah and cut it (Sunan Abi Dawud 3819, graded hasan), and the Companions went on to eat the cheese of the Magians in Iraq and Persia. The Hanbali school in one narration and Ibn Taymiyyah hold the same. The Shafi'i and Maliki schools, and the other Hanbali narration, consider the rennet of a non-zabihah animal to be part of carrion and therefore impure, so cheese made with it is avoided. Both positions are well founded; the Hanafi view is the easier one and has strong early-Muslim practice behind it, which is why most Pakistani and Turkish muftis allow cheese with animal rennet, while many Arab and Shafi'i scholars advise avoiding it.
What to do. Cheese labelled "vegetarian", "microbial rennet", "microbial enzyme" or "vegetable rennet" is halal by all views. If the label says only "enzymes" or "rennet", it may be either; the majority of mass-market cheddar, mozzarella and processed cheese in the US and UK uses microbial or FPC enzymes. Cheese with a halal or kosher mark is fine. If you follow the Shafi'i or Maliki school and want to be strict, avoid cheeses with unspecified rennet, especially aged Italian and French cheeses.
Whey and lactose. Whey is the liquid left after curdling; in whey powder, whey protein and lactose the question is the same as for cheese, since the rennet touched the whey. The Hanafi view treats it as halal; strict views check the rennet. Whey protein in protein shakes is usually from cheese made with microbial enzymes, and many brands are halal-certified. Some scholars note that even on the strict view the quantity of enzyme is negligible, which is an additional ground for leniency.
Other dairy additives. Pepsin, an enzyme sometimes used with rennet, is extracted from pig or calf stomach and must be checked. Gelatin is added to some yoghurts, cream cheeses and mousses to set them; check the label. Carmine (E120) colours some strawberry yoghurts. Flavoured milk drinks and ice cream may contain mono- and diglycerides (E471), usually vegetable; vegan or halal-certified ice cream removes the doubt.
