Meat and Zabihah Slaughter

🥩 Halal Foods

Meat is the area where halal matters most, because a lawful animal becomes unlawful if it is not slaughtered correctly. Here are the conditions of zabihah, the rulings on machine slaughter and stunning, the meat of Jews and Christians, and how to read halal certification logos abroad.

Conditions of zabihah. For the meat of a lawful land animal (cattle, sheep, goat, camel, chicken and the like) to be halal: (1) the slaughterer must be a sane Muslim, or a Jew or Christian (5:5); (2) the name of Allah must be mentioned at the time of slaughter: "Do not eat of that upon which the name of Allah has not been mentioned" (6:121), and the Prophet ﷺ said, "Whatever causes the blood to flow and over which the name of Allah is mentioned, eat it" (Sahih al-Bukhari 5498); (3) a sharp tool must cut the throat, windpipe and the two jugular veins so the blood flows out; (4) the animal must be alive at the moment of slaughter (5:3). The Hanafi school requires the tasmiyah strictly and considers meat over which it was deliberately omitted to be haram; the Shafi'i school considers the tasmiyah a strong Sunnah, so forgetting it does not make the meat unlawful. All schools agree that it should be said.

Sunnah etiquette. Use a sharp blade, do not sharpen it in front of the animal, face the Qiblah, give water and treat the animal kindly. The Prophet ﷺ said: "Allah has prescribed excellence in everything. When you slaughter, slaughter well; let one of you sharpen his blade and put the animal at ease" (Sahih Muslim 1955).

Mechanical slaughter. In large plants a rotating blade cuts chickens on a line. Many certification bodies accept this if a Muslim operator switches on the blade while saying the tasmiyah, the blade actually severs the required vessels, and a Muslim stands by to hand-slaughter any bird the blade misses. Other scholars, including many in South Asia, require that each animal be cut by hand with its own tasmiyah, since the Qur'an links the name of Allah to each act of slaughter. Both views exist among reputable scholars; a cautious Muslim prefers hand-slaughtered meat where it is available, and relies on a trusted certifier otherwise.

Stunning. In Europe, North America and Australia animals are often stunned (electric water-bath for poultry, captive bolt or gas for larger animals) before the cut. The principle is simple: if the animal is still alive when its throat is cut, and dies from the cut, the meat is halal; if the stun itself killed the animal, it is carrion (5:3). Reversible, low-voltage stunning that the animal would recover from is accepted by many bodies (including several in the UK, Malaysia and the Gulf) provided it is monitored. Irreversible methods such as penetrating captive bolt, or high-current stunning that stops the heart, are rejected by most scholars. Pigs stunned by gas are irrelevant since pork is haram in any case. Because the consumer cannot see what happened, this is exactly where certification matters.

Meat of the People of the Book. Allah says: "The food of those who were given the Scripture is lawful for you" (5:5). The majority of scholars understand "food" here to mean their slaughtered meat. So meat slaughtered by a practising Jew (kosher meat) or by a Christian who slaughters by cutting the throat is halal for Muslims, provided no other name is invoked and the animal itself is lawful. However, most meat in Western supermarkets today is not "slaughtered by a Christian" in the religious sense: it is killed in industrial plants, often by stunning that kills, with no religious act at all. Scholars therefore caution that the verse cannot be used to make ordinary supermarket meat halal; kosher meat is the clearest case where it applies.

Halal logos. Outside Muslim countries, look for the mark of a recognised certifier: for example HMC or HFA in the UK, IFANCA or HFSAA in North America, AHDAA or ICCV in Australia, JAKIM in Malaysia, MUI in Indonesia, ESMA in the UAE, SMIIC-aligned bodies in Turkey. Not every logo is equal; some certifiers accept stunning and machine slaughter and some do not, so learn the policy of the certifier you rely on. A handwritten "halal" sign in a shop window is only as good as the shopkeeper's honesty. If a Muslim shopkeeper tells you his meat is halal, you may rely on his word; the Prophet ﷺ allowed the Companions to eat meat from new Muslims of unknown practice, telling them to say Bismillah and eat (Sahih al-Bukhari 5507).

Key points

  • Slaughterer must be a Muslim, Jew or Christian; Allah's name is said; throat and jugulars cut; animal alive (5:3, 5:5, 6:121).
  • Stunning is acceptable only if the animal is still alive at the cut; irreversible stunning makes the meat carrion.
  • Machine slaughter is accepted by some certifiers with a Muslim operator and tasmiyah; many South Asian scholars require hand slaughter.
  • Kosher meat is lawful under 5:5; ordinary Western supermarket meat usually is not religiously slaughtered.
  • Learn the policy of the halal certifier you rely on; not all logos mean the same thing.
